Quick seafood dinners that don’t feel like a chore

Ok, real talk—this time of year I just want easy dinners that taste like I’m on vacation (even if I’m just eating outside in flip-flops). If you’re in the same boat, I’ve pulled together a handful of seafood recipes that are fresh, flavorful, and super chill to throw together.

Here’s what I’m loving lately:

Quick and Easy Seafood Charcuterie Board – Think salmon, shrimp, scallops, some fun dips, and your favorite crackers. It’s my go-to “lazy but still impressive” dinner when I don’t feel like cooking.

Quick Pesto Butter Salmon – Minimal effort, max flavor. That pesto butter does all the heavy lifting here.

Easy Basil Pesto Crusted Salmon with Panko – Crunchy, herby, and one of those “how is this so easy?” kind of meals.

Herb-Crusted Cod with Lemon and Panko – Light, lemony, and kind of feels like you’re eating at a nice beachy restaurant.

Creamy Pesto Salmon Pasta – Cozy but still summer-y. And yeah, I 100% eat this on the patio in stretchy shorts.

That’s the vibe: good food, nothing too fussy, and maybe a glass of something cold while you cook.
