What I'm Cooking This August ☀️

August is one of my favorite months to cook. The farmers' market is overflowing, tomatoes are at their sweetest, and simple meals somehow feel a little more special when everything is in season.

If I were putting together a late summer dinner this month, this is exactly what I'd make.

Bruschetta Dip with Whipped Feta — This crowd-pleasing appetizer layers creamy whipped feta with juicy tomatoes, fresh basil, garlic, and a drizzle of balsamic glaze. Sco

Italian Lemon Chicken (Pollo al Limone) — Golden Parmesan-crusted chicken cutlets finished in a silky lemon butter sauce with white wine and fresh lemon. It's restaurant-inspired, surprisingly approachable, and one of my favorite ways to turn a simple chicken dinner into something special.

Italian Spinach & Arugula Salad — Peppery arugula, baby spinach, artichokes, avocado, tomato, shaved Parmesan, toasted pine nuts, and a bright homemade vinaigrette make this simple salad the perfect fresh counterpoint to the lemon chicken.

Grilled Squash & Zucchini with Lemon Basil Drizzle — Lightly charred summer squash and zucchini are finished with a fresh lemon basil drizzle and crumbled feta for a side that celebrates peak summer produce.

Choose ingredients that naturally belong together.
The easiest way to build a memorable meal is to let the season guide you. When fresh greens, tomatoes, basil, zucchini, and summer squash are all at their best, they don't compete—they complement one another. Start with great ingredients, keep the recipes simple, and let each dish bring something different to the table.
