Warm weather is here, which means salad is starting to have its moment. But not just any salad—I'm talking colorful, flavor-packed bowls that can stand alone as dinner or bring something fresh to your table when you’re grilling out. The real secret? A killer vinaigrette.

These aren’t fussy or complicated, just simple salads with fresh dressings that bring out all the best in summer produce. So if you’ve got a fridge full of greens, herbs, cukes, and tomatoes, here’s some recipes to make them taste a bit extra.

Salads I’m Loving:

Mango Cucumber Salad with Avocado and Fresh Mint – Juicy mango, crisp cucumber, creamy avocado, and a hit of fresh mint—cooling and colorful, and perfect with grilled mains.

Italian Spinach and Arugula Salad with Artichokes, Tomato & Avocado – This one’s all about balance: peppery greens, creamy avocado, briny artichokes, fresh shaved parmesan, and a simple vinaigrette that ties it all together with great texture and bold flavor in every bite.

Lemony Green Bean Salad with Goat Cheese – Snappy green beans and crumbled goat cheese tossed in a bright, lemony vinaigrette. This one's made for hot days.

Charred Corn Salad with Smoky Lime Vinaigrette – Sweet corn, juicy tomato, creamy avocado, salty feta, and smoky lime dressing come together for a bold, juicy side that’s always a hit.

Panzanella Salad with Fresh Mozzarella – A rustic Italian-style salad with juicy tomatoes, crisp cucumber, fresh basil, homemade croutons, and a vinaigrette that soaks into every bite. Add fresh mozzarella and you’re golden.
